About the Brand

The La Pavoni lever espresso machine was the first of its kind in Italy and Europe. Invented by Desiderio Pavoni and patented by Luigi Bezzera in 1902, it is now widely used in coffee and espresso bars around the world. Coffee is produced when water then steam from a horizontal boiler passes through ground coffee at just the right pressure enabling the machine to produce a perfect cup of exceptionally smooth tasting coffee.

In addition to a complete line of commercial units for foodservice and hospitality use, La Pavoni Spa has developed the original lever machine along with other traditional espresso machines and grinders for residential use.

The coffee obtained with the Neapolitan coffee maker is characterized by an intensely aromatic taste and a light body. The ideal grind for this process is medium/coarse, not fine as for common Moka coffee makers.

Coffee made in the Neapolitan Moka "Cuccumella" has a particular flavor that is richer and more intense than the espresso. Instead, its aroma is less intense but more complex.

Unlike a moka express, a Cuccumella does not use the pressure of steam to force the water through the coffee, relying instead on gravity.
